Just imagine: You, some sunshine, and some juicy, mouth-watering seafood. (And, if you wanted to throw a glass of wine into the mix, we have some perfect pairing ideas<\/a>.) The West Coast might be packed with awesome restaurants to enjoy Dungeness crab<\/a>, oysters<\/a>, or even a bit of caviar<\/a>, but you can also whip up a seafood-forward feast in the comfort of your own home.<\/p>\n\n\n\n

Problem is, finding quality seafood at your supermarket can yield a lot<\/em> of confusion. How do you know if you\u2019re getting the best bang for your buck? Are there any telltale signs that a cut of fish is past its prime? And farm-raised fish\u2014is it really that<\/em> bad? Don\u2019t worry, you\u2019re not the only one who has some questions about shopping for seafood. That\u2019s exactly why we tapped a few culinary pros to share their tips and tricks to stocking your fridge with fish.<\/p>\n\n\n

Pay Attention to Your Senses<\/h2>\n\n\n\n

According to Amber Evans<\/a>, private chef and owner of Feast Collective Food & Beverage in Southern California, your senses are your very best shopping tools. For many, visual cues are one of the first ways you can tell the difference between seafood that\u2019s up-to-snuff and just so-so. \u201cLook for seafood that\u2019s firm and glistening, not slimy,\u201d she says. \u201cIf you’re buying seafood in styrofoam trays, skip anything sitting in liquid, especially if it looks milky.\u201d Meanwhile, those who are on the hunt for a whole fish like branzino, the answer lies in their eyes. \u201cClear eyes are key,\u201d she explains, \u201cCloudy ones are a no-go.\u201d <\/p>\n\n\n\n

Once you\u2019ve given your supermarket\u2019s inventory a once-over, bring your other senses into the mix. Evans says the best seafood should be cool to the touch and smell like the ocean, not a fish tank. \u201cIf something smells off, trust your gut and skip it,\u201d she says.<\/p>\n\n\n

Treat Live Shellfish with Care<\/h2>\n\n\n\n

Though some people might settle for salmon filets<\/a> or tuna steaks\u2014which have been cut and prepped for the ultimate ease\u2014adventurous home chefs might want to bring home some live shellfish. (You know, mussels, clams, and even a whole lobster!) But remember: Dealing with live shellfish is very<\/em> different from a typical filet. For starters, Evans says you\u2019ll have to follow an entirely different set of shopping rules, like looking for options with a \u201ctightly closed\u201d shell. \u201cIf they\u2019re slightly open, give them a gentle tap,\u201d she says. \u201cIf they don\u2019t close up, it\u2019s time to pass.\u201d When looking for lobster, Evans recommends buying the livelier ones. \u201cThe more feisty, the fresher.\u201d<\/p>\n\n\n\n

Once you get home from the grocery store, it\u2019s crucial to store your live shellfish properly. \u201cClams and mussels are alive,\u201d Evans shares. \u201cThey need to breathe!\u201d Instead of storing them in a plastic bag or sealed container, the chef recommends keeping them in a bowl covered with a damp towel in your fridge. \u201cThat way, they stay happy (and alive) until you’re ready to cook them,\u201d she adds.<\/p>\n\n\n\n

Know the Difference Between Frozen and Fresh<\/h2>\n\n\n\n

You might\u2019ve heard that buying seafood from your grocery store\u2019s freezer aisle is often cheaper (and fresher!) than going straight to the fishmonger, but is it always<\/em> the case? Well, not exactly. Evans says that while fresh is great for grilling or saut\u00e9ing, frozen is actually the safer bet for anything raw. \u201cThat\u2019s actually what ‘sushi grade’ usually means,\u201d she says. \u201cIt was frozen at a very specific temperature to kill off any parasites that would normally be destroyed during cooking.\u201d <\/p>\n\n\n\n

In addition to raw fish, Garrett Adair says frozen scallops are typically better than the \u201cfresh\u201d version. \u201cThe scallops come to the market frozen and are thawed, so frozen at the store saves you freshness,\u201d explains the Sonoma, California-based chef. When it\u2019s time to cook your frozen fish, Evans says thawing it slowly in the refrigerator keeps the texture intact and reduces the risk of bacteria growth.<\/p>\n\n\n\n

However, if you do<\/em> purchase fresh fish, Adair says it\u2019s in your best interest to cook it as soon as possible. \u201cDon\u2019t buy fish to hold or refreeze,\u201d Adair adds. \u201cYou should prepare it for the same day as most fish are always frozen and thawed at least once.\u201d Refreezing, he explains, can often damage the quality.<\/p>\n\n\n

Do Your Research<\/h2>\n\n\n\n

When it comes to buying seafood, a little bit of research can often go a long way\u2014especially when deciding between farm-raised and wild-caught fish. Though Adair says wild-caught fish generally has a richer taste and higher omega-3 fatty acids, farm-raised doesn\u2019t always deserve the bad rep it has garnered. \u201cFarm-raised seafood isn’t inherently bad,\u201d he explains. \u201cIts quality depends on farming practices. Look for sustainably sourced options with better environmental and health.\u201d <\/p>\n\n\n\n

If you\u2019re buying pre-packaged seafood, Evans recommends looking for the Marine Stewardship Council logo, a little blue fish that signifies meeting certain environmental standards. \u201cWhen in doubt, use that smartphone to your advantage,\u201d she adds. \u201cA quick search can tell you a lot about the brand or help you find stores nearby that carry responsibly sourced options.\u201d<\/p>\n\n\n\n
